Panna Cotta with Oatmeal Crunch and Blueberries

Panna Cotta is such a classic dessert nowadays, that I don’t even know if people are not making it any more because of boredom? Well, I just do not care about being trendy when it comes to desserts, because if it’s yummy, then I want it in my tummy! It’s so light (not calorie wise, its full fat cream, hello!) and like a gentle touch to your palate. It’s so tasty and mild it’s almost a bit ingratiating, but with the right accessories, this wobbly vanilla kiss will surprise and excite you again. I added some cardamon for extra spice, and I’m using agar agar as a gelling agent because this is a vegetarian blog so no gelatine here!

At this time of the year a lot of us have some dinner parties ahead of us, sometimes this means cooking for a lot of guests. Don’t panic, Panna Cotta is the perfect dessert for plenty of people, just multiply the recipe and wipe the sweat from your forehead. You can heat up some cream, right? Then you can create this! Serve it with whatever you like, but since the Panna Cotta itself is creamy and sweet, I recommend something tart, and something with some structure or crunch (like crumbled cookies or this easy oat meal crunch I’m preparing here) to make it more interesting.

What you need:
200 ml cream
1 tablespoon sugar
1/2 teaspoon agar agar
1 vanilla pod
1 tablespoon cardamon seeds
100 ml oatmeal
1 tablespoon sugar beet syrup
1 tablespoon butter
a pinch of salt
blueberries
